Your entrée into the exciting world of professional cuisine! The Le Cordon Bleu Cuisine program is designed for you to master the technical skills and gain the confidence and knowledge to apply what you will learn to any style of cuisine.

Our Diplome de Cuisine is still considered the most rigorous and comprehensive programme in classical French culinary techniques and international cuisine available today. The programme offers complete hands on training and is comprised of three certificates at basic, intermediate and superior levels of cuisine and earn a diploma that is welcomed in the world's finest kitchens.

Use the plate as your canvas and gain the knowledge, discipline and understanding of technical skills that encourage your creativity and natural talent to blossom.

Basic Cuisine is your preparatory course into the adventures of French cuisine. As the term progresses, techniques are layered upon each other and become more complicated, incorporating aspects of organization, preparation, balance and timing. For both the novice and the more knowledgeable, it lays the foundation on which to build in the following terms.
  • Introduction to French cuisine

  • Classic knife cuts and culinary techniques

  • Food preparation and mise en place

  • Palate training

Cuisine Intermédiaire

"BUILDING CONFIDENCE"


11 weeks • Certificate

Prerequisite: Cuisine de Base

Through practice and repetition, you will begin to perform tasks with more ease and instinct, and demonstrations will highlight various presentations from platter to plate. Intermediate Cuisine emphasizes the importance of "mise en place," understanding organization, production, and presentation.

Cuisine Supérieure

Prerequisite:
Cuisine Intermédiaire

The Superior Cuisine level exposes you to the evolution of cuisine and focuses on contemporary developments. Full menus demonstrated by the chefs are inspired by what can be found in the top kitchens today. The ingredients are richer and more refined. You are now encouraged to be more creative both in taste and presentation.

  • A photocopy of government issued photo I.D. or passport
  • A resume/CV (no culinary experience required)
  • A letter of motivation detailing your goals, aspirations, and how you think Le Cordon Bleu Ottawa will help you achieve them
  • Proof of high school completion (Diploma), or equivalent – must be an official transcript

          OR

  • Passing grade on the Wonderlic test (provided to you on receipt of application)
